I know, Juliet. The figures are unbelievable aren‘t they! Pumpkin is a bit sweet for me, but a spicy soup works as a great foil to the sweetness. I’m not a fan of pumpkin pie s I don’t have sweet tooth, but if you roast it it gets rid of a lot of the water and can then be puréed. I think a lot of Americans use cans of pumpkin to make pie with.
There are literally hundreds of recipes for pumpkin, but at least compost it if you’re not going to use it!
It's shocking that so many pumpkins are wasted and so few people realise they're edible! Pumpkin is great in a spicy soup and I like pumpkin pie too.
